I wasn’t originally planning to participate in this month’s Foodie Extravaganza. December was a crazy month, and I didn’t think I’d have the time. And then…I got sick.


You’d think that would make things worse, and it kind of did for things like enjoying Christmas. But you see, when I’m sick my comfort food is lugaw. Lugaw is a Filipino rice porridge similar to the better known Chinese congee or Korean jook. It’s the perfect food for a cold, or in my case, sore throat – it’s hot and thick with enough substance to fill you up.


So as I set about making my rice porridge, I remembered Stacy’s comment on my eggnog rice pudding post – why is it that we don’t think of savory uses for grains like oats? Good question, Stacy!


So I took the challenge, switched out my rice for steel cut oats and proceeded to make my lugaw. The verdict? Delicious! The result is just as comforting, warming and filling as the traditional porridge, and the steel cut oats lend a satisfying chew and bite that rice doesn’t have. Bonus: by making it with oats instead of rice, you get the extra minerals and fiber that oats bring to the table!

{Recipe} Lemon Ginger Oat Porridge #foodieextravaganza

Cook Time: 30 minutes

Yield: 4 servings


  • 5 cups chicken broth
  • 1 cup steel cut oats
  • 1/2 tsp salt (or to taste)
  • 1 inch ginger root, minced or grated (apx 1 Tbs)
  • green onion, thinly sliced
  • lemon, cut into wedges


  1. Bring chicken broth to a boil and add oats, ginger and salt.
  2. Cook, stirring occasionally, 20-30 minutes or until oats are cooked through and soft with just a little bite.
  3. Top with green onion and a squeeze of lemon.
