The holidays may be over, but do you really need an excuse to throw together some cute mini food? Oh, you do? Well, these little bites of yum would be perfect as an app for your next get together, finger food for game day or even as a fun after school snack. Reason enough?

The beauty of these little guys is that they’re just as versatile as their full-sized counterparts. You can top them with whatever floats your boat – butter and sour cream, goat cheese and caramelized onions, smoked salmon and dill, coronation chicken. Seriously, the possibilities are endless!

Here I’ve got different combinations of butter, sour cream, cream cheese, chives, bacon, broccoli, cheddar, jack cheese, Hawaiian black salt and Sriracha salt. All fairly standard potato fare, but don’t they look so much fancier in mini form? Why is it that mini food has that effect?

Okay, so why mini, though? Tiny potatoes wont be as filling as a full sized baked potato and can be used as an appetizer or a snack. They’re perfect as finger food for game day or a foodie gathering – prep a bunch of them with your favorite toppings ahead of time or set out the baked potatoes with a bunch of topping options and let people create their own little bites.

Ingredients

  • Mini Potatoes

Instructions

  1. Preheat oven to 350°F
  2. Slice potatoes in half length-wise.
  3. Place potatoes on a baking sheet and sprinkle generously with sea salt or kosher salt
  4. Bake for 20-40 minutes or until potatoes are soft and easily pierced with a fork.
  5. Top with desired fixings.
